Best French Onion Soup Recipe with Gruyere Croutons

  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 cups beef stock (or a mix of beef and chicken stock)
  • 1/2 cup dry white wine (optional)
  • A few sprigs of fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 cups Gruyere cheese, grated
  • 8 thick slices of baguette, toasted

Instructions

  1. Slice the onions thinly and grate the Gruyere cheese. Toast the baguette slices lightly and set aside.
  2. In a large soup pot or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions and stir to coat. Cook for 25-30 minutes, stirring occasionally, until the onions are golden brown and caramelized.
  3. Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for 2-3 minutes. Add the beef stock, thyme, bay leaves, and season with salt and pepper. Bring to a boil, then reduce to a gentle simmer. Cover and let it cook for 20 minutes.
  4. Place the toasted baguette slices on a baking sheet. Top each slice generously with grated Gruyere cheese.
  5. Preheat your oven’s broiler and place the croutons under it for 2-3 minutes, or until the cheese is melted and bubbly.
  6. Ladle the hot soup into oven-safe bowls. Place a Gruyere crouton on top of each bowl and serve immediately.
