  • 1 pound (450 grams) fresh carrots, peeled and sliced into 1-inch pieces or baby carrots
  • 2 tablespoons (28 grams) unsalted butter
  • 3 tablespoons (45 grams) brown sugar
  • 2 tablespoons (30 ml) honey
  • Pinch of salt
  • Optional: 1/4 teaspoon cinnamon
  • 2 tablespoons (30 ml) chopped fresh parsley

Instructions

  1. Wash and peel 1 pound (450 grams) of fresh carrots. Cut them into 1-inch (2.5 cm) pieces, or leave them whole if using baby carrots.
  2. Fill a medium-sized saucepan with water and bring it to a boil. Add the carrots and cook for 5-7 minutes until they’re slightly tender but not mushy. Drain and set aside.
  3. In the same saucepan, melt 2 tablespoons (28 grams) of unsalted butter over medium heat. Stir in 3 tablespoons (45 grams) of brown sugar, 2 tablespoons (30 ml) of honey, and a pinch of salt. Cook for about 2-3 minutes, stirring constantly, until the mixture becomes smooth and bubbly.
  4. Add the cooked carrots to the saucepan with the glaze. Stir gently to ensure each piece is fully coated. Lower the heat to medium-low and let the carrots simmer for another 5-7 minutes, stirring occasionally, until they are tender and the glaze has thickened.
  5. Once the carrots are tender and glossy, remove them from the heat. Sprinkle 2 tablespoons (30 ml) of chopped fresh parsley over the top for a burst of freshness and color.
  6. Transfer the glazed carrots to a serving dish and enjoy while they’re warm!
