  • 1 cup powdered sugar, sifted

  • 3 Butterfinger bars (approx. 2 oz each), crushed
  • Optional: 1/4 cup chopped roasted peanuts

Instructions

  1. In a medium mixing bowl, combine peanut butter and softened butter. Beat together until smooth and creamy (about 2 minutes).
  2. Stir in powdered sugar and lightly crushed cornflakes. Mix until evenly combined and the mixture holds together when pressed. If too sticky, add another tablespoon of cornflakes.
  3. Use a small ice cream scoop or tablespoon to portion the mixture into 1-inch balls. Roll gently between your palms for a smooth, round shape. Place each ball onto a parchment-lined baking sheet (makes about 24 bites).
  4. Refrigerate the shaped bites for 20 minutes to firm up, or freeze for 10 minutes if short on time.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second bursts, stirring between each, until fully melted and smooth. Alternatively, melt using a double boiler.
  6. Using two forks, dip each chilled bite into the melted chocolate, turning to coat completely. Let excess chocolate drip off, then place back on the parchment-lined sheet.
  7. Immediately sprinkle each chocolate-coated bite with crushed Butterfinger bars and optional chopped roasted peanuts. Press lightly so the topping sticks.
  8. Return the bites to the fridge for 15-20 minutes, or until the chocolate is firm.
  9. Once set, transfer Butterfinger Bites to an airtight container, layering with wax paper. Store at room temperature for up to 2 days, or refrigerate for up to a week.
