  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil (plus 1 tablespoon for sautéing)
  • 8 ounces spaghetti
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Season the chicken strips with 2 tablespoons of Cajun seasoning, salt, and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken strips and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside.
  3. Boil a large pot of salted water and cook the spaghetti according to the package instructions. Drain and set aside.
  4. In the same skillet, add 1 tablespoon of olive oil and sauté the minced garlic for 1 minute until fragrant. Add the diced bell peppers and cook for another 3-4 minutes until softened.
  5. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer and let it cook for 5 minutes to thicken slightly.
  6. Stir in the grated Parmesan cheese and remaining Cajun seasoning. Taste and adjust the seasoning if needed.
  7. Return the cooked chicken to the skillet, tossing it in the creamy sauce. Add the cooked spaghetti and gently mix until the pasta is fully coated in the sauce.
  8. Let everything simmer together for 2-3 minutes to meld the flavors. Serve hot, garnished with fresh parsley or extra Parmesan cheese if desired.
