  • ¼ cup (50g) granulated sugar
  • ½ cup (113g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 2 tbsp unsalted butter
  • ¼ cup (50g) brown sugar
  • 1 tsp ground cinnamon
  • ½ cup (100g) granulated sugar
  • ¼ cup (60ml) heavy cream
  • 2 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until it resembles wet sand. Press the mixture firmly into the bottom of the pan. Bake for 8-10 minutes, then set aside to cool.
  3. Beat the softened cream cheese until smooth. Add sugar, eggs, and vanilla extract, mixing until fully incorporated. Pour the filling over the cooled crust and spread evenly.
  4. In a skillet, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon. Cook for 5-7 minutes, stirring occasionally, until the apples are tender and caramelized. Let cool slightly before spooning over the cheesecake filling.
  5. Place the pan in the oven and bake for 35-40 minutes, or until the center is set but slightly jiggly. Cool the bars completely, then refrigerate for at least 4 hours or overnight.
  6. In a small saucepan, melt sugar over medium heat until it turns amber. Slowly whisk in heavy cream, then add butter and a pinch of salt. Stir until smooth. Allow the sauce to cool slightly.
  7. Once the cheesecake bars are chilled, cut them into squares and drizzle with caramel sauce just before serving.

Notes

Make sure cream cheese and eggs are at room temperature for a smooth filling. Refrigerate the bars before cutting for clean slices. Watch the caramel closely to prevent burning.
