Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat butter, granulated sugar, and brown sugar until pale and fluffy (2-3 minutes with mixer, 4 minutes by hand).
  4. Beat in egg, vanilla extract, and orange zest until well combined. Scrape down the bowl as needed.
  5. Gradually add the flour mixture to the wet ingredients, mixing just until combined. Do not over-mix.
  6. Gently fold in dried cranberries and white chocolate chips. If using nuts, add them now.
  7. Cover and refrigerate dough for 10-15 minutes (optional, for best chew).
  8. Use a medium cookie scoop (about 1.5 tablespoons) or spoon to portion dough onto baking sheets, spacing about 2 inches apart.
  9. Bake for 10-12 minutes, until edges are lightly golden and centers look just set. Do not over-bake.
  10. Let cookies rest on the baking sheet for 3-5 minutes, then transfer to wire racks to cool.
