  • 8 cups cubed, day-old bread (French bread or sourdough)
  • 6 tablespoons unsalted butter, divided
  • 4 large yellow onions, thinly sliced
  • 3 cups beef broth (or vegetable broth for vegetarian version)
  • 1 teaspoon dried thyme or 2 teaspoons fresh thyme
  • 4 cloves garlic, minced
  • 1Β½ cups Gruyere cheese, shredded
  • 1 teaspoon dried sage (or fresh if preferred)
  • 2 large eggs, beaten
  • Salt & pepper to taste
  • Optional: Fresh parsley, chopped for garnish
  • Optional: Β½ cup white wine

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and grease a 9×13-inch baking dish.
  2. Melt 4 tablespoons of butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 25–30 minutes until golden brown and caramelized. Add the garlic and cook for an additional 2 minutes.
  3. Stir in thyme, sage, and salt and pepper. If using white wine, deglaze the pan with the wine, scraping up any browned bits, and let it simmer for 3–4 minutes.
  4. Spread the cubed bread evenly in a mixing bowl. Pour the caramelized onion mixture over the bread.
  5. In a separate bowl, whisk together the eggs and beef broth. Pour the mixture over the bread and toss gently to combine.
  6. Transfer the mixture to your greased baking dish. Sprinkle the shredded Gruyere cheese evenly over the top.
  7. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 20–25 minutes, or until the top is golden and bubbly.
  8. Let the casserole rest for 10 minutes before serving. Garnish with fresh parsley if desired.
