Ingredients

  • Cooked turkey, shredded or diced
  • Spaghetti or fettuccine, cooked al dente
  • Unsalted butter
  • Onion, finely diced
  • Garlic, minced
  • All-purpose flour
  • Low-sodium chicken broth
  • Heavy cream
  • Parmesan cheese, freshly grated
  • Cheddar cheese, shredded
  • Mushrooms, sliced (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a skillet, melt the butter over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute.
  4. Sprinkle the flour over the onion and garlic mixture, stirring constantly to form a paste. Cook for 1-2 minutes to eliminate the raw flour taste.
  5. Gradually whisk in the chicken broth and heavy cream, ensuring no lumps form. Let the sauce simmer for 5-7 minutes until thickened.
  6. Stir in the grated Parmesan cheese, salt, and pepper. Taste and adjust seasoning as needed.
  7. Add the cooked turkey and sliced mushrooms (if using) to the sauce, stirring to coat evenly.
  8. In the prepared baking dish, combine the cooked pasta and turkey sauce mixture. Spread evenly and top with shredded cheddar cheese.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
  10. Remove from the oven and let cool for 5 minutes before serving. Garnish with chopped parsley.

Notes

For a golden topping, broil the dish for the last 2-3 minutes. Add a splash of milk or broth if the sauce looks too thick.
