  • 2 medium apples, any variety (e.g., Honeycrisp or Granny Smith), diced
  • 1 ripe pear, diced
  • 1 cup red or green seedless grapes, halved
  • 1/2 cup pomegranate arils
  • 1/2 cup walnuts, toasted and roughly chopped
  • 1/4 cup dried cranberries
  • 3 tablespoons pure maple syrup
  • 1/2 cup Greek yogurt (plain or vanilla, or dairy-free yogurt for vegan option)
  • 1/2 teaspoon ground cinnamon
  • Pinch of nutmeg (freshly grated if possible)
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons freshly squeezed orange juice

Instructions

  1. Wash all fruits thoroughly. Core and dice the apples and pear into bite-sized pieces. Slice the grapes in half and set aside. Remove pomegranate arils carefully.
  2. Heat a small pan over medium heat and toast the walnuts for 2-3 minutes, shaking the pan occasionally. Remove from heat and let cool.
  3. In a small mixing bowl, whisk together Greek yogurt, maple syrup, cinnamon, nutmeg, vanilla extract, and orange juice until smooth. Adjust sweetness or spices as needed.
  4. In a large mixing bowl, combine apples, pear, grapes, pomegranate arils, walnuts, and dried cranberries. Pour the dressing over the fruits and gently toss until evenly coated.
  5. Cover the bowl and let the salad chill in the refrigerator for 15-20 minutes before serving.
  6. Transfer the salad to a serving dish and serve cold. Optionally, sprinkle a dash of cinnamon on top before serving.
