  • 1 cup (150g) apples, peeled and diced
  • 2 tablespoons granulated sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, cream together 1/2 cup (115g) of softened unsalted butter, 1/2 cup (100g) granulated sugar, and 1/2 cup (100g) brown sugar until light and fluffy. This takes about 2-3 minutes with a whisk or wooden spoon.
  3. Add 2 large eggs and 1 teaspoon vanilla extract. Mix until smooth and fully combined.
  4. In a separate bowl, whisk together 1 1/2 cups (190g) all-purpose flour, 1 teaspoon cream of tartar, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined. Be careful not to overmix—the dough should be thick but spreadable.
  6. Fold in 1 cup (150g) peeled, diced apples. The apples should be cut into small, even pieces to ensure even baking.
  7. Transfer the dough to your prepared baking dish, spreading it into an even layer with a spatula.
  8. In a small bowl, mix 2 tablespoons granulated sugar and 1/2 teaspoon ground cinnamon. Sprinkle it generously over the top of the dough.
  9. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  10. Let the bars cool in the pan for at least 15 minutes before lifting them out using the parchment paper.
