  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, cream together 1 cup (230g) of unsalted butter and 1 cup (200g) of brown sugar until light and fluffy, about 2 minutes.
  3. Add 1/2 cup (100g) of granulated sugar to the bowl and mix until combined.
  4. Beat in 2 large eggs, one at a time, followed by 2 teaspoons of vanilla extract. Mix until smooth.
  5. In a separate bowl, whisk together 2 cups (250g) of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix; you want a thick and slightly sticky batter.
  7. Spread the batter evenly into the prepared baking pan, using a spatula to smooth the top.
  8. In a small bowl, mix 3 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon. Sprinkle this cinnamon sugar mixture evenly over the top of the blondie batter.
  9. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Remove from the oven and let the blondies cool in the pan for about 15 minutes. Then, use the parchment paper overhang to lift them out onto a wire rack to cool completely before slicing into squares.
