  • 2 medium carrots, peeled and diced
  • 2 cloves garlic, minced
  • ½ cup dried cranberries
  • ½ cup pecans, roughly chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the Wild Rice: In a medium saucepan, combine the wild rice blend with the vegetable broth. Bring to a boil, then reduce the heat to low and let it simmer for 40-45 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
  2. Sauté the Veggies: Heat the butter in a large skillet over medium heat. Add the diced onion, celery, and carrots, and sauté for 5-7 minutes until softened and fragrant. Stir in the minced garlic and cook for another minute.
  3. Add the Mix-Ins: Reduce the heat to low and stir in the cooked wild rice, dried cranberries, and chopped pecans. Mix well to combine.
