  • 2 large eggs

  • Β½ cup (120ml) vegetable oil
  • 1 teaspoon fresh orange zest
  • 1 cup (100g) fresh cranberries
  • 1 cup (120g) powdered sugar (optional, for glaze)
  • 2 tablespoons orange juice (optional, for glaze)

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs, sugar, milk, vegetable oil, and orange zest until well combined.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing.
  5. Fold in the cranberries. If using frozen cranberries, thaw and pat them dry before adding.
  6. Transfer the batter into the prepared loaf pan and spread evenly.
