  • 1 ripe avocado, peeled and pitted

  • Black pepper, to taste
  • 2 slices cheddar or mozzarella cheese (or vegan cheese)
  • Optional: tomato slices
  • Optional: thinly sliced red onion
  • Optional: baby spinach leaves
  • Optional: chili flakes

Instructions

  1. Place the ripe avocado in a small bowl. Mash with a fork until creamy but still slightly chunky. Add lemon juice, salt, and black pepper. Mix well and adjust seasoning to taste.
  2. Spread a thin, even layer of softened butter on one side of each bread slice (about 1/2 tablespoon per slice).
  3. Lay two slices of bread, butter-side down, on a cutting board. Spread the mashed avocado evenly onto both slices. Top each with a slice of cheddar or mozzarella cheese. Add optional tomato, onion, spinach, or chili flakes if desired.
  4. Place the remaining bread slices on top, butter-side up. Press gently.
  5. Preheat a nonstick skillet or grill pan over medium heat for about 2 minutes.
  6. Transfer the assembled sandwiches to the hot pan. Cook for 2-3 minutes per side, pressing lightly with a spatula, until deep golden and crispy.
  7. Check that the cheese is melted and avocado is warm. If needed, cover the pan with a lid for the last minute.
  8. Transfer sandwiches to a cutting board and let rest for 1 minute.
  9. Slice each sandwich in half diagonally and serve hot.

Notes

For extra crunch, use thick-cut bread and don’t skimp on butter. Mash avocado while the skillet heats up for efficiency. Cover the pan briefly to help melt cheese. Customize with add-ins like tomato, onion, spinach, or chili flakes. Use gluten-free or vegan substitutes as needed. Let the sandwich rest before slicing to prevent filling from oozing.
