  • 2 oz (56g) cream cheese, softened
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 1 large egg, room temperature
  • 2 tsp pure vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1 1/2 cups (195g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (85g) rainbow funfetti sprinkles (jimmies style)
  • Optional: 1/4 cup (40g) white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat unsalted butter and cream cheese until smooth and creamy, about 2 minutes.
  3. Add granulated sugar and brown sugar, beat until fluffy and light in color (1-2 minutes). Scrape sides as needed.
  4. Beat in egg, vanilla extract, and almond extract. Mix until just combined.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add dry ingredients to wet mixture, beating on low until just combined. Dough will be soft but not sticky.
  7. Using a spatula, gently fold in funfetti sprinkles and white chocolate chips (if using).
  8. Using a 1.5 tbsp cookie scoop or spoon, drop dough balls onto the prepared baking sheet, spacing about 2 inches apart. Flatten slightly with your fingers.
  9. Bake for 10-12 minutes, until edges are set and centers look just slightly underbaked.
  10. Let cookies sit on the baking sheet for 2 minutes, then transfer to a wire rack to cool.
  11. Once cool, serve or store in an airtight container.

Notes

Use jimmies-style sprinkles for best color and texture. For gluten-free cookies, substitute with a 1:1 gluten-free flour blend. If dough is too sticky, chill for 10 minutes before baking.
