A crunchy, creamy, and smoky salad perfect for family gatherings, barbecues, or a quick weekday lunch.

Ingredients

Scale
  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup red onion, thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 1/4 cup craisins or raisins
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • Salt and pepper to taste

Instructions

  1. Cook the bacon: Heat a skillet over medium heat and cook the bacon until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain excess grease, then chop into small pieces.
  2. Prep the broccoli: Rinse the broccoli and pat it dry. Cut it into bite-sized florets and place them in a large mixing bowl.
  3. Add the veggies and toppings: Add the thinly sliced red onion, shredded cheddar cheese, sunflower seeds, and craisins to the bowl of broccoli.
  4. Make the dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth and creamy.
  5. Combine everything: Pour the dressing over the broccoli mixture and toss until everything is evenly coated. Add the chopped bacon and give it one final toss.
  6. Chill and serve: Cover the bowl and refrigerate for at least 15 minutes to let the flavors meld together. Serve chilled and enjoy!

Notes

For a lighter option, use Greek yogurt instead of mayonnaise. Keep the bacon separate until serving to maintain its crispness.
