A creamy, spicy buffalo chicken dip with a tangy blue cheese swirl, perfect for game day or casual get-togethers. This easy recipe combines shredded chicken, cream cheese, buffalo sauce, and cheeses for a crowd-pleasing snack.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300g, rotisserie chicken recommended)
  • 8 oz cream cheese, softened (225g)
  • 1/2 cup sour cream (120ml)
  • 1/2 cup buffalo hot sauce (120ml), e.g., Frank’s RedHot
  • 1 cup shredded sharp cheddar cheese (100g)
  • 1/2 cup blue cheese crumbles (75g)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Black pepper to taste
  • Chopped green onions (optional for garnish)
  • Celery sticks, tortilla chips, or crackers for serving

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and lightly grease an 8×8-inch (20×20 cm) baking dish.
  2. In a large bowl, beat the softened cream cheese with a hand mixer or whisk until creamy and smooth (about 2-3 minutes). If too stiff, microwave for 15 seconds to soften.
  3. Add the sour cream and continue beating until well combined and fluffy, about 1 minute.
  4. Fold in the buffalo hot sauce, garlic powder, onion powder, and freshly ground black pepper to taste. Stir gently to mix evenly.
  5. Mix in the shredded cooked chicken and shredded cheddar cheese until evenly distributed.
  6. Transfer half of the mixture to the prepared baking dish and smooth out with a spatula.
  7. In a separate small bowl, gently mix the blue cheese crumbles with a few tablespoons of the dip mixture to loosen it.
  8. Drop spoonfuls of the blue cheese mixture over the half-layer of dip in the baking dish. Use a butter knife or skewer to swirl the blue cheese into the dip, creating a marbled effect without overmixing.
  9. Top with the remaining buffalo chicken mixture, spreading evenly over the blue cheese swirl layer.
  10. Bake for 20-25 minutes or until the dip is bubbly and lightly golden on top.
  11. Garnish with chopped green onions if desired and serve hot with celery sticks, tortilla chips, or your favorite dippers.

Notes

Use softened cream cheese to avoid lumps. Be gentle when swirling the blue cheese to maintain the marbled effect. Let the dip cool for 5 minutes before serving to thicken slightly. If too thick after baking, stir in a splash of milk or more sour cream to loosen. The dip can be prepared a day ahead and baked just before serving, adding 5 extra minutes to baking time if cold from the fridge. For dairy-free or vegan versions, substitute cream cheese, sour cream, and cheddar with plant-based alternatives.
