Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, sugar, and cinnamon (if using) in a bowl until evenly combined.
  3. Press mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a glass or measuring cup for an even layer.
  4. Bake crust for 10 minutes. Let cool completely.
  5. Reduce oven temperature to 325°F (160°C).
  6. In a large bowl, beat softened cream cheese until smooth and fluffy (about 2 minutes). Scrape sides to avoid lumps.
  7. Add sour cream, granulated sugar, eggs, vanilla extract, and lemon zest. Blend on medium speed until just combined. Do not overmix.
  8. If using, blend in heavy cream for extra silkiness.
  9. Pour filling over cooled crust. Smooth the top with a spatula and tap the pan gently to release air bubbles.
