A rich, creamy, and comforting cornbread casserole with a pudding-like center and slightly crisp edges, perfect for parties and gatherings.

Ingredients

Scale
  • 1 box Jiffy Corn Muffin Mix
  • 1 can (15 oz) creamed corn
  • 1 can (15 oz) whole kernel corn, drained
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13 baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together 2 large eggs and 1 cup sour cream until smooth.
  3. Add 1 can (15 oz) creamed corn and 1 can (15 oz) drained whole kernel corn to the bowl. Stir to combine.
  4. Carefully incorporate 1 box Jiffy Corn Muffin Mix into the mixture, stirring until just combined. Avoid overmixing.
  5. Pour in 1/2 cup melted butter and gently fold into the batter.
  6. If desired, add 1 cup shredded cheddar cheese for extra flavor. Stir gently until evenly distributed.
  7. Transfer the mixture to the prepared baking dish. Use a spatula to spread it evenly.
  8. Bake for 40-45 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.
  9. Allow the casserole to cool for about 5-10 minutes before serving.
