Velvety mashed potatoes infused with roasted garlic and topped with golden swirls of melted butter, perfect for any meal or occasion.

Ingredients

Scale
  • Russet potatoes, peeled and cut into chunks
  • 1 head of garlic, roasted
  • Unsalted butter, softened
  • Heavy cream, warmed
  • Milk (whole milk preferred, or non-dairy alternatives)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Slice the top off a head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden.
  2. Place peeled and chopped potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil, then reduce heat and simmer until fork-tender, about 15-20 minutes.
  3. Drain the potatoes using a colander and return them to the pot. Mash immediately while still hot.
  4. In a small saucepan, gently heat the heavy cream and milk until warm but not boiling.
  5. Stir softened butter into the mashed potatoes, followed by the roasted garlic (squeeze cloves out of their skins). Mix until fully incorporated.
  6. Gradually pour the warm cream and milk into the potatoes, stirring until desired consistency is reached.
  7. Season with salt and freshly ground black pepper to taste.
  8. Melt a couple of tablespoons of butter and drizzle over the finished mashed potatoes. Use a spoon to create swirls. Garnish with fresh parsley if desired.
  9. Serve immediately and enjoy.
