  • 6 tablespoons unsalted butter, melted
  • 16 oz (450g) cream cheese, softened (full-fat)
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/3 cup Irish cream liqueur (Baileys or favorite brand)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sour cream
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease an 8×8 inch baking pan or line it with parchment paper.
  2. Crush 24 Oreo cookies using a food processor or place in a zip-top bag and crush with a rolling pin.
  3. Mix crushed Oreos with 6 tablespoons melted unsalted butter until mixture resembles wet sand.
  4. Press the Oreo mixture firmly into the bottom of the prepared pan and bake for 10 minutes. Let cool slightly.
  5. In a large bowl, beat 16 oz softened cream cheese with 2/3 cup granulated sugar until smooth and creamy.
  6. Beat in the eggs one at a time, fully incorporating each before adding the next.
  7. Mix in 1/3 cup Irish cream liqueur, 1 teaspoon vanilla extract, 1/2 cup sour cream, and a pinch of salt until just combined.
  8. Pour the filling evenly over the cooled Oreo crust and smooth the top with a spatula.
  9. Bake for 35-40 minutes until edges are set but center has a slight jiggle.
  10. Cool to room temperature, cover with foil or plastic wrap, and refrigerate for at least 4 hours or overnight.
  11. Cut into bars using a sharp knife dipped in hot water and wiped dry between cuts. Serve chilled.
