Tender chicken bathed in a rich, creamy sauce with a spicy kick from fresh jalapeños, perfect for a quick and comforting weeknight dinner.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 fresh jalapeños, sliced thin (remove seeds for less heat)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken breasts generously with salt, pepper, and paprika on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4-5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add garlic and sliced jalapeños. Cook for 2-3 minutes until fragrant.
  4. Reduce heat to medium. Pour in chicken broth and heavy cream, whisking to combine. Let the sauce simmer for 5 minutes until slightly thickened.
  5. Return the seared chicken to the skillet, spooning the creamy sauce over the top. Cover and simmer for 8-10 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C).
  6. If desired, sprinkle shredded cheese over the chicken and let it melt into the sauce.
  7. Garnish with fresh cilantro and serve hot with rice, pasta, or crusty bread.

Notes

[‘Adjust the spice level by removing jalapeño seeds for less heat or adding cayenne pepper for extra spice.’, ‘If the sauce feels too thick, add a splash of chicken broth to loosen it up.’, ‘Let the chicken rest for a minute or two after cooking to retain its juices.’]
