  • Optional: 2 tbsp coffee liqueur (like Kahlúa) or dark rum
  • About 24 ladyfingers (savoiardi)
  • Unsweetened cocoa powder, for dusting
  • Optional: dark chocolate shavings or curls

Instructions

  1. Prepare 1 1/2 cups (360 ml) of strong espresso or coffee. Let it cool completely, then stir in the coffee liqueur or rum if using.
  2. In a chilled bowl, whip 1 cup (240 ml) of cold heavy cream until it forms soft peaks, about 3-4 minutes. Avoid over-whipping.
  3. In another bowl, gently beat 8 oz (225 g) mascarpone cheese with 1/3 cup (65 g) granulated sugar and 1 tsp vanilla extract until smooth and creamy, about 2 minutes.
  4. Carefully fold the whipped cream into the mascarpone mixture using a spatula, gently to keep it light and airy.
  5. Quickly dip each ladyfinger into the cooled coffee mixture for about 1 second per side, then place a layer of soaked ladyfingers at the bottom of a 9×13 inch (23×33 cm) dish.
  6. Spread half of the mascarpone cream mixture evenly over the ladyfingers layer and smooth gently.
  7. Add another layer of dipped ladyfingers and top with the remaining mascarpone cream. Smooth the top.
  8. Cover the dish with plastic wrap and refrigerate for at least 8 hours, preferably overnight.
  9. Just before serving, dust the top liberally with unsweetened cocoa powder using a sifter and optionally add dark chocolate shavings.

Notes

Do not soak ladyfingers too long to avoid sogginess; about 1 second per side is ideal. Whip cream to soft peaks only to maintain light texture. Chill tiramisu at least 8 hours or overnight for best flavor and texture. Use a sifter for even cocoa powder dusting. Can substitute mascarpone with coconut cream-based cheese alternative for dairy-free version and gluten-free ladyfingers if needed.
