  • 3 cloves garlic, minced
  • Β½ cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup heavy cream (240 ml)
  • Β½ cup chicken broth (120 ml)
  • Β½ cup freshly grated Parmesan cheese
  • A handful fresh basil, chopped
  • Red pepper flakes, optional, a pinch

Instructions

  1. Season the chicken breasts generously on both sides with salt and pepper. Pound them to an even thickness (about Β½ inch) using a meat mallet.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook about 5 minutes per side until golden and cooked through (internal temperature 165Β°F). Remove chicken and set aside on a warm plate.
  3. Reduce heat to medium and add butter to the skillet. When melted, add minced garlic and sautΓ© for 30 seconds until fragrant.
  4. Stir in chopped sun-dried tomatoes and cook for 1 minute to release their flavor.
  5. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and cook for 4-5 minutes until sauce thickens slightly.
  6. Stir in grated Parmesan cheese until melted and incorporated. Add red pepper flakes if using, and season sauce with salt and pepper to taste.
  7. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the chicken and simmer for 3 more minutes to meld flavors.
  8. Just before serving, sprinkle chopped fresh basil over the chicken.

Notes

If sauce gets too thick, loosen with a splash of chicken broth or cream. Do not overcrowd the pan when searing chicken to get a golden crust. Use medium heat for sauce to avoid breaking or scorching the cream. Fresh garlic and basil enhance flavor. For dairy-free, substitute coconut cream for heavy cream and nutritional yeast for Parmesan.
