  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams), pounded to even thickness
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (preferably extra virgin)
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes packed in oil (drain but keep some oil)
  • 1 cup (240 ml) low sodium chicken broth
  • 3/4 cup (180 ml) heavy cream (or half-and-half for lighter option)
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Pound to an even thickness about 1/2 inch (1.3 cm). (5 minutes)
  2. Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat until fat shimmers but does not smoke. (2 minutes)
  3. Place chicken breasts in the pan spaced apart. Cook about 5 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Remove chicken and set aside. (10 minutes)
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir constantly for 1-2 minutes until fragrant. Add a splash of olive oil if pan is dry. (2 minutes)
  5. Pour in 1 cup chicken broth and scrape up browned bits from the pan. Let simmer 3-4 minutes to reduce slightly. (4 minutes)
  6. Lower heat to medium-low. Stir in heavy cream and grated Parmesan cheese until melted and sauce thickens. Add red pepper flakes if using. Adjust seasoning with salt and pepper. (3-5 minutes)
  7. Return chicken breasts to the pan, nestle into sauce, and spoon sauce over top. Simmer gently for 3-5 minutes to meld flavors and heat chicken through. Avoid boiling. (5 minutes)
  8. Stir in fresh lemon juice and sprinkle chopped basil over the dish before serving. (1 minute)

Notes

If sauce is too thick, add more broth or cream to loosen. If too thin, simmer longer but watch carefully. Use a meat thermometer to avoid overcooking chicken. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Avoid boiling sauce to prevent curdling. Leftovers keep well refrigerated for up to 3 days; reheat gently on stovetop with added broth or cream.
