  • 1/2 cup ice cubes
  • 1 teaspoon lime juice (optional)

Instructions

  1. Peel and chop about 1 cup of fresh pineapple into small chunks. Slice 1 ripe banana into rounds.
  2. Pour 1 cup of full-fat coconut milk and 1/2 cup of coconut yogurt into the blender jar.
  3. Add pineapple chunks, banana slices, 1 teaspoon vanilla extract, and 1 tablespoon honey or maple syrup if desired.
  4. Add about 1/2 cup ice cubes and 1 teaspoon fresh lime juice to the blender.
  5. Blend on high speed for 1 to 2 minutes until thick, smooth, and airy with a frothy top.
  6. Taste and adjust sweetness or thickness by adding more honey or coconut milk if needed, then blend briefly again.
  7. Serve immediately in glasses or jars for best texture and flavor.
