A quick and easy creamy shrimp Alfredo pasta recipe that combines tender shrimp with a velvety homemade Alfredo sauce, perfect for weeknight dinners or special occasions.

  • 12 oz (340 g) fettuccine or linguine pasta
  • Salt, for pasta water
  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tbsp unsalted butter, divided
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 cup (240 ml) heavy cream or half-and-half
  • 4 oz (115 g) cream cheese, softened
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 1/2 cup (120 ml) whole milk
  • 1/2 tsp garlic powder
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add 12 oz fettuccine and cook according to package instructions until al dente, about 10-12 minutes. Reserve 1 cup of pasta water, then drain the rest and set pasta aside.
  2. While pasta cooks, pat dry 1 lb shrimp with paper towels. Season with salt, pepper, and optional crushed red pepper flakes.
  3. Heat 1 tbsp unsalted butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  4. Reduce heat to medium, add remaining 1 tbsp butter to the skillet. Add minced garlic and cook for about 30 seconds until fragrant but not browned.
  5. Lower heat to medium-low. Add heavy cream, softened cream cheese, milk, garlic powder, and butter to the skillet. Whisk or stir continuously until cream cheese melts and mixture is smooth, about 3-5 minutes.
  6. Stir in freshly grated Parmesan cheese until fully melted and sauce thickens slightly. If sauce is too thick, add reserved pasta water 1-2 tbsp at a time to loosen.
  7. Add drained pasta and cooked shrimp to the sauce. Toss gently to coat evenly. Heat through for 1-2 minutes, adjusting consistency with more pasta water if needed.
  8. Taste and add salt and freshly ground black pepper as needed. Garnish with chopped fresh parsley.
  9. Serve immediately while warm.

Notes

Dry shrimp well before searing to get a proper sear and avoid steaming. Use fresh Parmesan cheese for best flavor and smooth sauce. Reserve pasta water to adjust sauce consistency. Avoid boiling sauce after adding cheese to prevent breaking. Reheat gently with added milk or pasta water to loosen sauce.
