  • 1/2 cup unsalted butter, softened
  • 1/3 cup whole milk or dairy-free alternative
  • 1/4 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour or gluten-free option
  • 1/3 cup brown sugar (for streusel topping)
  • 1/4 cup unsalted butter, softened (for streusel topping)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Line a large baking sheet with parchment paper.
  2. Spread the cubed sweet potatoes evenly on the baking sheet. Bake for 25–30 minutes or until fork-tender.
  3. While the sweet potatoes are roasting, prepare the pecan streusel topping. In a medium mixing bowl, combine 1/2 cup of flour, 1/3 cup of brown sugar, 1/4 cup of softened butter, and 1 cup of chopped pecans. Mix until crumbly and set aside.
  4. Once the sweet potatoes are roasted, transfer them to a large mixing bowl. Add 1/2 cup of softened butter, 1/4 cup of brown sugar, 1/3 cup of milk, 2 large eggs, 1 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and a pinch of salt.
  5. Using a hand mixer, beat the sweet potato mixture until smooth and creamy. Taste and adjust the sweetness or seasoning if needed.
  6. Grease a 9×13-inch baking dish and spread the sweet potato mixture evenly into the dish.
  7. Sprinkle the pecan streusel topping evenly over the sweet potato base.
  8. Bake the casserole in the preheated oven for 30–35 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.
  9. Let cool for 5–10 minutes before serving. Enjoy warm!
