  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup heavy cream (or substitute half-and-half for lighter)
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 cup fresh baby spinach
  • 2 tablespoons cream cheese, softened
  • Optional garnishes: fresh basil leaves, extra Parmesan cheese

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and garlic powder.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  4. Stir in chopped sun-dried tomatoes and cook for 1-2 minutes to release their flavor.
  5. Pour in chicken broth and heavy cream, stirring to combine. Whisk in cream cheese until the sauce is silky and smooth. Add Parmesan cheese and crushed red pepper flakes if using. Let the sauce simmer gently for 3-5 minutes until it thickens slightly.
  6. Toss in fresh spinach and cook until just wilted, about 1-2 minutes.
  7. Return the cooked chicken breasts to the pan. Spoon sauce over the top and let everything warm together for 2-3 minutes so flavors meld.
  8. Taste the sauce and adjust seasoning with salt and pepper if needed. Garnish with fresh basil and extra Parmesan if desired. Serve hot.

Notes

If the sauce gets too thick, add a splash of chicken broth or cream to loosen it. Avoid overcrowding the pan to ensure a good sear on the chicken. Use room temperature chicken for even cooking. Oil-packed sun-dried tomatoes provide the best flavor and texture; rehydrate dry ones in warm water before use. Freshly grated Parmesan cheese melts better than pre-grated powders.
