  • 1 lb (450 g) fresh asparagus spears, trimmed
  • 810 thin slices prosciutto
  • 12 tablespoons olive oil
  • Freshly ground black pepper, to taste
  • Fresh lemon juice (optional, a squeeze)
  • 2 tablespoons grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Trim the asparagus by snapping off the woody ends, keeping about 6-8 inches (15-20 cm) of tender stalk per piece.
  3. Lightly brush asparagus with olive oil (1-2 tablespoons) and season with freshly ground black pepper.
  4. Cut prosciutto slices in half lengthwise if large, creating strips about 1-1.5 inches (2.5-4 cm) wide.
  5. Wrap each asparagus spear with one strip of prosciutto, spiraling from base to tip.
  6. Arrange wrapped spears on the prepared baking sheet, spacing about 1/2 inch (1.2 cm) apart.
  7. Bake for 12-15 minutes until prosciutto is crispy and asparagus is tender but firm, rotating pan halfway through.
  8. Optional: Squeeze fresh lemon juice and sprinkle grated Parmesan cheese over spears immediately after baking.
  9. Serve immediately while warm and crispy.

Notes

Use thin prosciutto slices for best crisping. Do not overcrowd the baking sheet to avoid soggy prosciutto. Optionally broil for 1-2 minutes if prosciutto is not crispy enough. Reheat leftovers in oven at 350°F for 5-7 minutes to regain crispness; avoid microwave.
