  • 1 pound fresh green beans, trimmed
  • 1012 slices thin-cut bacon
  • 3 tablespoons honey
  • 2 tablespoons unsalted butter, melted
  • 2 large garlic cloves, minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon cracked black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Sesame seeds (optional, for garnish)
  • Chopped fresh parsley or chives (optional, for garnish)

Instructions

  1. Wash and trim green beans, snipping off woody ends. If using frozen, thaw and pat dry thoroughly.
  2. Bring a large pot of salted water to a boil. Blanch beans for 1 minute until bright green and slightly tender. Drain and rinse under cold water.
  3. In a mixing bowl, whisk together honey, melted butter, minced garlic, soy sauce, black pepper, and red pepper flakes if using.
  4. Divide beans into 10–12 equal portions (about 8–10 beans per bundle). Wrap each bundle tightly with a slice of bacon, tucking ends under or securing with a toothpick.
  5. Line a rimmed baking sheet with parchment paper. Place bundles on the sheet, or on a wire rack for extra crispiness.
  6. Brush bundles generously with the honey garlic glaze, coating all sides. Reserve some glaze for brushing halfway through baking.
  7. Bake at 400°F for 20–25 minutes, flipping bundles halfway and brushing with extra glaze. Broil for 1–2 minutes at the end if needed for extra crispiness.
  8. Sprinkle hot bundles with sesame seeds and fresh herbs if desired. Let cool for 5 minutes before serving.

Notes

Use thin-cut bacon for best crispiness. Don’t overcrowd the pan to avoid steaming the bacon. Flip bundles halfway and brush with extra glaze for even browning. Broil briefly at the end for extra crunch, but watch closely to prevent burning. Bundles can be assembled ahead and refrigerated until ready to bake. For gluten-free, use Tamari or coconut aminos; for dairy-free, use margarine. Leftovers can be refrigerated up to 3 days or frozen for 1 month.
