  • 2 cups shredded sharp cheddar cheese
  • 6 strips of bacon, cooked until crispy and crumbled
  • 3 stalks green onions, sliced thin
  • 1/2 cup sour cream (for serving)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. Wash and dry the russet potatoes thoroughly. Using a mandoline or sharp knife, slice them into thin rounds about 1/8 inch (3 mm) thick, keeping slices uniform.
  3. In a large bowl, toss the potato slices with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  4. Arrange the potato slices in a single layer on a baking sheet. Overlapping is okay but avoid piling too thickly.
  5. Bake for 20-25 minutes, flipping the potato slices halfway through to brown both sides evenly. They should be golden brown and crispy.
  6. While the potatoes bake, fry the bacon strips in a skillet over medium heat until crisp. Drain on paper towels and crumble into bite-sized pieces.
  7. Remove the baking sheet from the oven. Sprinkle shredded cheddar cheese evenly over the potatoes, then scatter crispy bacon and sliced green onions on top.
  8. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Serve immediately with dollops of sour cream and extra green onions if desired.

Use a mandoline or sharp knife to slice potatoes thinly and evenly for best crispiness. Flip potatoes halfway through baking to ensure even browning. Cook bacon until crispy for texture. Watch cheese closely during final bake to avoid burning. For dairy-free, substitute vegan cheese and coconut yogurt for sour cream.
