Instructions

  1. Preheat your oven to 425°F (220°C). Lightly grease your wire rack with olive oil to prevent sticking.
  2. Pat the chicken thighs dry with paper towels to remove moisture. Season both sides with black pepper.
  3. Arrange the chicken thighs skin-side up on the wire rack, spaced apart for even heat circulation.
