A quick and easy side dish featuring broccoli florets roasted to crispy perfection with garlic and freshly grated Parmesan cheese. Perfect for busy nights, potlucks, or family dinners.

  • 4 cups broccoli florets (about 450 grams), trimmed into bite-sized pieces
  • 3 tablespoons extra virgin olive oil (45 ml)
  • 3 garlic cloves, minced finely
  • ½ cup grated Parmesan cheese (about 50 grams), freshly grated
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • Lemon zest from ½ a lemon (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and dry the broccoli florets thoroughly. Trim off any thick stems.
  3. In a large mixing bowl, toss the broccoli florets with 3 tablespoons of extra virgin olive oil and the minced garlic until well coated.
  4. Season with ½ teaspoon salt and ¼ teaspoon freshly ground black pepper. Toss gently to combine.
  5. Spread the broccoli in a single layer on a rimmed baking sheet, ensuring they have space to breathe.
  6. Roast in the oven for 15 minutes. Halfway through (7-8 minutes), shake the pan or flip the florets with tongs for even browning.
  7. Remove the pan from the oven and sprinkle the grated Parmesan evenly over the broccoli. Add lemon zest and red pepper flakes if using.
  8. Return to the oven and roast for another 5-7 minutes until the cheese is golden and crispy.
  9. Check that the broccoli is tender inside with crispy edges and a golden cheesy crust. Adjust salt if needed and serve immediately.

Notes

Dry broccoli thoroughly before roasting to ensure crispiness. Flip halfway through roasting for even browning. Use freshly grated Parmesan for best results. For vegan version, substitute Parmesan with nutritional yeast or vegan cheese. Reheat leftovers in oven at 375°F for 5-7 minutes to maintain crispiness.
