  • 1 large egg, beaten
  • 1 tablespoon vegetable oil
  • 1/2 pound ground beef (80/20 fat ratio recommended)
  • 2 tablespoons teriyaki sauce
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/2 cup thinly sliced cucumber
  • 1/2 cup shredded carrot
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Mayonnaise or spicy sriracha mayo (optional)
  • Fresh lettuce leaves (optional)

Instructions

  1. Prepare the pickled veggies: In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Add the sliced cucumber and shredded carrot, tossing to coat well. Set aside to marinate for at least 10 minutes.
  2. Cook and form ramen buns: Boil the ramen noodles for 2-3 minutes until just tender, then drain well. Transfer to a bowl and stir in the beaten egg to bind the noodles. Divide into 4 equal portions and press each into a flat, round patty about 4 inches in diameter.
  3. Fry ramen buns: Heat vegetable oil in a non-stick skillet over medium heat. Carefully place the ramen patties in the pan and fry for 3-4 minutes on each side until golden brown and crispy. Flip gently using a spatula to avoid breaking. Remove buns and drain on paper towels.
  4. Make the teriyaki beef patties: In a bowl, combine ground beef, teriyaki sauce, grated ginger, minced garlic, salt, and pepper. Mix gently but thoroughly. Form into two patties, slightly larger than the ramen buns.
  5. Cook the beef patties: In the same skillet (wipe excess oil if needed), cook patties over medium-high heat for about 4 minutes per side or until cooked through and caramelized. Internal temperature should reach 160°F (71°C).
  6. Assemble the burger: Spread mayonnaise or sriracha mayo on one ramen bun. Add a lettuce leaf, then place the teriyaki beef patty on top. Spoon some pickled veggies over the patty, then top with the second ramen bun. Press gently to hold together.
  7. Serve immediately while buns are still crunchy and beef patty is juicy.

Notes

Chill ramen buns for 10 minutes before frying to help them hold together. Avoid overmixing beef to keep patties tender. Keep pans clean between batches for best crispiness. Pickled veggies add a refreshing tang that balances the richness.
