  • 1 cup frozen spinach, thawed and drained
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko preferred)
  • 1/4 tsp paprika (optional)
  • Vegetable oil or canola oil (for frying)

Instructions

  1. In a medium mixing bowl, combine spinach, cream cheese, sour cream, mozzarella cheese, Parmesan cheese, garlic, onion powder, salt, and pepper. Mix until well combined. Taste and adjust seasoning if needed.
  2. Using your hands or a small cookie scoop, roll the spinach dip mixture into bite-sized balls. Place them on a plate or baking sheet lined with parchment paper.
  3. Prepare three separate bowls for the coating: one with flour, one with beaten eggs, and one with breadcrumbs. Mix paprika into the breadcrumbs if desired.
  4. Heat about 2 inches of vegetable or canola oil in a skillet or frying pan over medium heat. The oil is ready when you drop a small piece of breadcrumb in and it sizzles.
  5. Roll each spinach dip ball first in the flour, then dip it into the egg, and finally coat it in the breadcrumbs. Ensure each ball is fully coated.
  6. Carefully place each coated ball into the hot oil. Fry in batches to avoid overcrowding the pan. Cook for 2-3 minutes on each side until golden brown and crispy.
  7. Remove the bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Serve immediately while hot and crispy. Enjoy!
