crispy ultimate cheese pull grilled cheese - featured image

A quick and easy grilled cheese sandwich featuring a melty blend of mozzarella, cheddar, and smoked gouda with a crispy buttery crust, perfect for any occasion.

Ingredients

Scale
  • 2 slices thick-cut sourdough or sturdy white sandwich bread
  • 2 tablespoons unsalted butter, softened
  • 1/3 cup shredded whole milk mozzarella
  • 1/3 cup shredded sharp cheddar
  • 1/3 cup shredded smoked gouda
  • Optional: pinch of garlic powder or dried herbs (e.g., oregano)

Instructions

  1. Shred each cheese separately and mix gently in a bowl. Let butter soften at room temperature (about 5 minutes).
  2. Spread about 1 tablespoon of softened butter evenly on one side of each bread slice (this will be the outside of the sandwich).
  3. Place one slice of bread butter-side down on your workspace. Pile the cheese blend evenly on top, covering edge to edge but not overstuffing. Optionally sprinkle garlic powder or herbs.
  4. Top with the second slice of bread, butter-side up.
  5. Warm a non-stick skillet or cast-iron pan over medium-low heat for 2 minutes.
  6. Place the sandwich in the pan and cook for 4-5 minutes without moving it until the bottom is deep golden brown.
  7. Flip carefully using a spatula, press gently with the spatula, and cook for another 4-5 minutes until the bread is golden and cheese is melted. Lower heat if bread browns too fast.
  8. Remove from pan and let the sandwich rest for a minute before cutting to allow cheese to settle.

Notes

Use medium-low heat to ensure cheese melts before bread burns. Freshly shredded cheese melts better than pre-sliced. Cover pan briefly if cheese melts slowly. For gluten-free, use GF bread and adjust cooking time. For dairy-free, use vegan butter and plant-based cheeses but cheese pull will differ.
