  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 medium potatoes (Russet or Yukon Gold), peeled and cut into chunks
  • 4 carrots, sliced into thick rounds
  • 3 celery stalks, chopped into bite-sized pieces
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • 2 tablespoons olive oil (for browning the beef)

Instructions

  1. Wash, peel, and chop all your vegetables. Cut the beef chuck roast into 1-inch cubes and season with salt and pepper.
  2. Optional—heat olive oil in a large skillet over medium-high heat and sear the beef cubes until browned on all sides.
  3. Add the potatoes, carrots, celery, onion, and garlic to the bottom of the crock pot. Place the browned beef on top.
  4. In a bowl, combine beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaves. Pour this mixture over the beef and vegetables.
  5. Cover and cook on low for 8 hours or high for 4-5 hours until the beef is tender and the vegetables are soft but not mushy.
  6. Optional—stir in a slurry made of 1 tablespoon flour mixed with 2 tablespoons water during the last 30 minutes of cooking to thicken the stew.
  7. Remove the bay leaves. Taste the stew and adjust seasoning with additional salt and pepper, if needed.
  8. Serve warm and enjoy!

Notes

For extra flavor, brown the beef before adding it to the crock pot. Cut vegetables evenly to ensure even cooking. Adjust seasoning at the end for best results.
