  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix (or 3 tablespoons homemade ranch seasoning)
  • 8 ounces cream cheese, softened
  • 1 cup chicken broth
  • 1 teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Trim any excess fat off the chicken breasts and place them at the bottom of the crock pot.
  2. Sprinkle the ranch seasoning mix evenly over the chicken. Add garlic powder, salt, and pepper.
  3. Pour the chicken broth over the chicken, ensuring it covers the bottom of the pot.
  4. Cut the cream cheese into small cubes and scatter them on top of the chicken. Do not mix.
  5. Set the crock pot to cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shredded.
  6. Shred the chicken directly in the crock pot using two forks and stir to combine with the sauce.
  7. Serve hot, garnished with fresh parsley if desired, and pair with your favorite sides.

Notes

If the sauce feels too thick, thin it out with a splash of chicken broth or milk before serving. Leftovers reheat wonderfully and taste even better the next day.
