This comforting recipe combines hearty kielbasa, creamy potatoes, and gooey melted cheese, all cooked together in a crockpot for a simple yet flavorful dish.

  • 1 bag frozen diced hash brown potatoes (32 oz)
  • 1 lb kielbasa, sliced into rounds
  • 2 cups shredded cheddar cheese, divided
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 1/4 cup butter, melted
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Spray the inside of your crockpot with non-stick cooking spray.
  2. In a large mixing bowl, combine cream of chicken soup, sour cream, melted butter, onion powder, garlic powder, salt, and pepper. Stir until smooth.
  3. Add frozen hash brown potatoes and half of the shredded cheddar cheese to the bowl. Mix well to coat the potatoes evenly.
  4. Layer the potato mixture into the crockpot, spreading it out evenly.
  5. Top the potatoes with sliced kielbasa rounds, spacing them out for even cooking.
  6. Sprinkle the remaining shredded cheddar cheese over the top.
  7. Cover the crockpot with the lid and set it to cook on low for 4-5 hours or on high for 2-3 hours.
  8. After cooking, gently stir the mixture to combine everything. The cheese will be melted, and the potatoes tender.
  9. Serve warm and enjoy!
