  • 1 pound lean ground beef (80/20)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large bell pepper, chopped (red or green)
  • 2 cans (14.5 oz each) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, diced avocado, tortilla chips

Instructions

  1. Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the skillet. SautΓ© for 2-3 minutes until fragrant and softened.
  3. Transfer the cooked beef, onion, and garlic mixture into the crockpot.
  4. Add the chopped bell peppers, diced tomatoes, tomato paste, kidney beans, black beans, and beef broth to the crockpot.
  5. Sprinkle in the chili powder, cumin, paprika, oregano, and a generous pinch of salt and pepper. Stir everything together until well combined.
  6. Set the crockpot to low and cook for 6-8 hours, or high for 3-4 hours. Stir occasionally if you can, but it’s not required.
  7. Before serving, taste and adjust seasonings as needed. You can add more chili powder for extra heat or a splash of beef broth if it’s too thick.
  8. Ladle the chili into bowls and add your favorite toppings like shredded cheese, sour cream, and cilantro.
