Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds (optional, for garnish)
  • Green onions (optional, for garnish)

Instructions

  1. In a medium mixing bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Taste and adjust sweetness or saltiness if needed.
  2. Place the chicken breasts in your crockpot. Pour the sauce mixture over the chicken, ensuring it’s evenly coated.
  3. Cover and cook on low for 6 hours or high for 3-4 hours. The chicken should be tender and easily shred with a fork.
  4. In the final 30 minutes of cooking, mix cornstarch with water to create a slurry. Stir it into the crockpot and let the sauce thicken.
  5. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot and stir it into the sauce.
  6. Sprinkle with sesame seeds and chopped green onions before serving. Enjoy over steamed rice or with roasted vegetables!
