Decadent Chocolate Peanut Butter Parfait with Brownie Crumble

A quick and indulgent layered dessert combining rich chocolate ganache, creamy peanut butter mixture, and crunchy brownie crumble for a perfect treat.

  • 1 cup semisweet chocolate chips (170g)
  • 1 cup heavy cream (240ml)
  • 1 tsp vanilla extract
  • 3/4 cup creamy peanut butter (180g)
  • 4 oz cream cheese, softened (115g)
  • 1/3 cup powdered sugar (40g)
  • 1/2 cup heavy cream, whipped (120ml)
  • 1 cup brownie pieces (150g)
  • Optional garnishes: 1/4 cup chopped or salted peanuts (30g), chocolate shavings or cocoa powder

Instructions

  1. Make the Chocolate Ganache: In a small saucepan, gently heat 1 cup (240ml) of heavy cream until it just starts to simmer. Remove from heat and pour over 1 cup (170g) of semisweet chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth and glossy. Stir in 1 tsp vanilla extract. Set aside to cool slightly, about 10 minutes.
  2. Prepare the Peanut Butter Layer: In a medium bowl, beat 4 oz (115g) softened cream cheese and 3/4 cup (180g) creamy peanut butter until smooth. Gradually add 1/3 cup (40g) powdered sugar and continue mixing until combined. In a separate bowl, whip 1/2 cup (120ml) heavy cream to soft peaks, then gently fold into the peanut butter mixture.
  3. Assemble the Parfaits: Spoon about 2 tablespoons of brownie crumble into the bottom of each parfait glass. Add about 3 tablespoons of the chocolate ganache, followed by about 3 tablespoons of the peanut butter cream. Repeat the layers once more, ending with brownie crumble on top.
  4. Garnish: Sprinkle chopped peanuts or a dusting of cocoa powder over the top. Optionally add chocolate shavings or a drizzle of melted chocolate.
  5. Chill: Refrigerate the parfaits for at least 1 hour to let the layers set and flavors meld.

Notes

Use a double boiler or heatproof bowl over simmering water to melt chocolate gently. Chill bowl and beaters before whipping cream for best results. Fold whipped cream gently into peanut butter mixture to keep it light. Add brownie crumble topping just before serving to keep it crunchy. Can substitute coconut cream and dairy-free alternatives for vegan or dairy-free versions.
