  • 2 tbsp (15g) powdered sugar
  • 1 tbsp (15ml) milk
  • 1 cup (175g) semi-sweet chocolate chips or chopped chocolate
  • 1 tbsp (15ml) coconut oil

Instructions

  1. Make the fudge base: In a medium saucepan over medium heat, whisk together cocoa powder, granulated sugar, and salt. Slowly add whole milk, stirring constantly to dissolve sugar and cocoa. Heat until it just begins to simmer, about 5 minutes. Remove from heat and whisk in heavy cream, softened unsalted butter, and vanilla extract until fully combined. Let it cool slightly; the texture should be smooth and glossy.
  2. Prepare the peanut butter swirl: In a small bowl, mix creamy peanut butter with powdered sugar and milk until you get a spreadable, swirlable consistency. If it feels too thick, add the milk drop by drop.
  3. Assemble the popsicles: Pour a couple of tablespoons of fudge base into each popsicle mold. Add a small dollop of the peanut butter mixture, then use a skewer or toothpick to gently swirl it into the fudge. Continue layering fudge and peanut butter swirl alternately until molds are filled, finishing with fudge on top. Use the skewer again to create a final swirl for a marbled effect.
  4. Freeze: Insert the sticks and freeze for at least 4 hours, or overnight for best results. The fudge should be firm but creamy.
  5. Make the chocolate shell: When ready to coat, melt semi-sweet chocolate chips and coconut oil in the microwave in 30-second bursts, stirring between, until smooth and shiny.
  6. Coat the popsicles: Dip each popsicle into the melted chocolate, letting the excess drip off. Place on parchment-lined tray and return to freezer for a few minutes until the shell hardens.
  7. Serve: Enjoy immediately for that crisp shell or store wrapped in freezer bags for up to a week.
