  • 3/4 cup (65g) unsweetened cocoa powder, sifted

  • 1/2 cup (90g) dark chocolate chunks (70% cocoa recommended)
  • 1/2 cup (90g) milk chocolate chips
  • 1/3 cup (60g) white chocolate chips or chunks

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease an 8×8-inch baking pan or line it with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together the all-purpose flour, sifted cocoa powder, and salt.
  3. In a large bowl, mix granulated sugar, brown sugar, and melted unsalted butter until fully blended and glossy, about 1-2 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the pure vanilla extract.
  5. Gently fold the flour-cocoa mixture into the wet ingredients using a spatula. Stop once no dry streaks remain to avoid overmixing.
  6. Fold in the dark chocolate chunks, milk chocolate chips, and white chocolate chips or chunks.
  7. Pour the batter into the prepared pan and smooth the top evenly with a spatula.
  8. Bake for 30-35 minutes. Start checking at 30 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
  9. Let the brownies cool completely in the pan on a wire rack for at least 1 hour before slicing.
  10. Slice using a sharp knife warmed slightly under hot water and dried. Serve at room temperature or slightly warm, optionally with vanilla ice cream.
