  • 4 tbsp (60 g) unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp (30 ml) olive oil
  • ½ cup (50 g) Parmesan cheese, grated
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste
  • About ½ cup (120 ml) reserved pasta water

Instructions

  1. Fill a large pot with water and add a generous pinch of salt. Bring to a rolling boil.
  2. Add 8 ounces (225 grams) of spaghetti or linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
  3. Before draining, scoop out about ½ cup (120 ml) of pasta water and set aside.
  4. Drain the noodles in a colander and set aside briefly.
  5. Heat 2 tablespoons (30 ml) olive oil and 4 tablespoons (60 grams) unsalted butter in a large skillet over medium-low heat.
  6. Once melted, add minced garlic (4 cloves). Stir frequently to avoid burning—it should become fragrant and lightly golden, about 1-2 minutes.
  7. If using, stir in ¼ teaspoon of red pepper flakes and cook for 30 seconds to release flavor.
  8. Add drained pasta directly into the skillet. Pour in reserved pasta water a little at a time, tossing constantly to coat the noodles evenly. The sauce should become silky and cling perfectly. This usually takes 1-2 minutes.
  9. Remove from heat and stir in ½ cup (50 grams) grated Parmesan cheese until melted and smooth.
  10. Season with salt and freshly cracked black pepper to taste.
  11. Sprinkle chopped fresh parsley on top for color and freshness.
  12. Serve immediately for best taste.
