Instructions

  1. Prep your ingredients: finely chop onion and garlic, dice tomatoes, shred lettuce and cheese, and set out optional toppings like cilantro and lime wedges.
  2. Heat a large skillet over medium-high heat. Add ground beef or turkey and cook, breaking it up with a spoon until it just starts to brown, about 4-5 minutes. Drain excess fat if needed.
  3. Add chopped onion and garlic to the skillet and cook until softened and fragrant, about 2-3 minutes.
  4. Stir in chili powder, cumin, smoked paprika, chipotle powder, salt, and pepper. Mix well to build the flavor base.
  5. Add tomato paste and water or broth. Lower heat to medium-low and simmer until the mixture thickens slightly, about 5 minutes. Add extra broth if too dry.
  6. Warm tortillas in a dry skillet or microwave, keeping them covered with a towel to stay warm and flexible.
