  • 1 tablespoon (12g) chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup (43g) mini dark chocolate chips (optional)

Instructions

  1. Toast the oats: Preheat a dry skillet over medium heat. Add 1 1/2 cups (135g) of rolled oats and toast, stirring frequently, for about 5 minutes until golden and fragrant. Let them cool slightly.
  2. Mix wet ingredients: In a mixing bowl, combine 1/3 cup (113g) honey, 1/2 cup (125g) natural peanut butter, and 1 teaspoon vanilla extract. Stir until smooth and well blended. Warm peanut butter slightly if stiff.
  3. Add dry ingredients: Stir in the toasted oats, 2 tablespoons (14g) ground flaxseed, 1 tablespoon (12g) chia seeds, and 1/2 teaspoon cinnamon. Mix thoroughly until evenly coated.
  4. Optional add-ins: Fold in 1/4 cup (43g) mini dark chocolate chips or other extras like chopped nuts or dried fruit evenly.
  5. Form the balls: Scoop about 1 tablespoon (15g) of mixture and roll between palms to form tight balls. Repeat until all mixture is used (makes about 18–20 balls). Chill for 10 minutes if mixture is sticky.
  6. Chill to set: Place energy balls on parchment-lined baking sheet and refrigerate for at least 30 minutes to hold shape.
  7. Store and enjoy: Transfer chilled energy balls to airtight container. Refrigerate up to one week or freeze for longer storage.
