  • 2 tbsp olive oil
  • 1 tbsp soy sauce (use gluten-free if needed)
  • 2 tbsp fresh lime juice
  • 2 tsp smoked paprika
  • 1 tsp ground allspice
  • 1 tsp cayenne pepper (adjust for spice tolerance)
  • 1 tsp garlic powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp dried thyme
  • 1 tsp brown sugar
  • Salt and black pepper to taste
  • 2 ripe mangoes, diced
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 small jalapeño, minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Make the marinade: In a bowl, whisk together olive oil, soy sauce, lime juice, smoked paprika, allspice, cayenne pepper, garlic powder, cinnamon, nutmeg, thyme, brown sugar, salt, and black pepper.
  2. Prepare the turkey: Pat the turkey dry with paper towels. Rub the marinade all over the turkey, making sure to coat it evenly. Let it sit for at least 30 minutes at room temperature or up to 4 hours in the fridge for deeper flavor.
  3. Preheat your grill or oven: If grilling, heat to medium-high and lightly oil the grates. If using the oven, preheat to 375°F (190°C).
  4. Cook the turkey: Place the turkey on the grill or on a baking sheet in the oven. Grill for 6-8 minutes per side or bake for 25-30 minutes, depending on thickness. The turkey should reach an internal temperature of 165°F (74°C).
  5. Make the mango salsa: While the turkey cooks, combine diced mangoes, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt in a bowl. Toss gently to mix.
  6. Rest the turkey: Allow the cooked turkey to rest for 5 minutes before slicing. This keeps the juices locked in.
  7. Serve: Slice the turkey and plate it with a generous scoop of mango salsa on top. Enjoy!

Notes

For a milder version, reduce cayenne and omit jalapeño. Use a meat thermometer to ensure the turkey is cooked perfectly. Mango salsa can be made ahead of time and stored in the fridge.
