Green bean almondine with lemon is a classic French-inspired side dish that combines buttery green beans, crunchy almonds, and zesty lemon for a flavorful and easy-to-make dish.

  • 1 pound fresh green beans, trimmed and washed
  • 3 tablespoons unsalted butter
  • 1/3 cup slivered almonds
  • 2 cloves garlic, freshly minced
  • 1 lemon, freshly squeezed juice and zest
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Trim the ends of the green beans and wash them thoroughly. Pat them dry with a kitchen towel.
  2. Heat a large skillet over medium heat and add 2 tablespoons of unsalted butter. Once melted, add the slivered almonds and stir frequently for 2-3 minutes until golden and fragrant.
  3. Remove the almonds from the pan and set aside. Add another tablespoon of butter and 1 tablespoon of olive oil to the skillet and let it melt.
  4. Add the minced garlic to the pan and sauté for 30 seconds, stirring to avoid burning.
  5. Add the green beans to the skillet and stir to coat them in the butter and garlic mixture. Cook for 5-7 minutes, stirring occasionally, until the beans are tender but still crisp.
  6. While the beans are cooking, zest and juice the lemon. Combine the zest and juice in a small bowl.
  7. Once the green beans are cooked, sprinkle the toasted almonds back into the skillet. Pour the lemon juice and zest over the top, then season with salt and pepper to taste.
  8. Toss everything to combine and cook for an additional minute to warm the lemon juice through.
  9. Remove from heat and transfer to a serving dish. Serve immediately.

Notes

For thicker green beans, blanch them in boiling water for 2 minutes before sautéing. Toasting the almonds enhances their flavor and adds crunch. Use fresh lemon for the best flavor.
